Ingredients
For the Cake:
1/2 cup butter, softened (1 stick)
1 cup granulated sugar
3 large eggs, room temperature
2 lemons, zested and juiced (divided)
1.5 cups fresh blueberries
1.5 cups all-purpose flour (plus 1 tablespoon to coat blueberries)
1 tsp baking powder
1/2 tsp salt
1/3 cup milk
1 tsp vanilla extract
For the Glaze:
1 cup powdered sugar
2 tbsp fresh lemon juice
Instructions
1. Cream Butter. Preheat your oven to 350 degrees Fahrenheit. Grease an 8x4 inch loaf pan. In a large bowl or stand mixer, beat the softened butter and granulated sugar on high speed for a full 5 minutes until it is very pale and fluffy. This builds the structure of the cake.
2. Add Wet. Add the room temperature eggs one at a time, beating well after each addition. Mix in the zest of the two lemons and the vanilla extract.
3. Alternate Dry and Wet. In a separate bowl, whisk together the flour, baking powder, and salt. Add half of this dry mixture to the butter mixture, then stir in the milk, and finally fold in the remaining dry mixture. Mix just until combined to keep the crumb tender.
4. Fold Berries. Toss the fresh blueberries with 1 tablespoon of flour in a small bowl. This prevents them from sinking to the bottom of the pan. Gently fold the flour-dusted berries into the batter, pour into the loaf pan, and bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean.
5. Glaze. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Whisk the powdered sugar and 2 tablespoons of fresh lemon juice together until smooth. Drizzle it generously over the warm cake and let it set before slicing.
