The heat of late June hangs heavy in the kitchen, but the wooden table is cool under my hands. A pile of green zucchini sits on the counter, freshly harvested from a neighbor's garden and still carrying a bit of garden dust. When the knife slides through them, they make that clean, satisfying snap that only belongs to summer vegetables.
The Table of Grace
Zucchini is a humble vegetable. If you have ever grown it, you know it is also incredibly abundant. A single plant will yield more than a family can eat, and you often find yourself leaving bags on your neighbors' porches. Yet, on its own, raw zucchini is rather plain. It doesn't have the showy color of a summer tomato or the sweetness of a peach. It is quiet and ordinary.
But when you toss it in olive oil, coat it in a generous layer of salty Parmesan, and put it in a hot oven, something beautiful happens. The high heat caramelizes the edges. The cheese melts and bakes into a crisp, golden crust that shatters when you bite into it. Suddenly, the vegetable that was almost too common to notice is the first thing to vanish from the serving plate.
In Ecclesiastes, we are told that God has made everything beautiful in its time. I find so much comfort in that. Grace does not require us to be spectacular on our own. It takes our quiet, ordinary lives and, with a bit of care and seasoning, makes them extraordinary. Today, as you roast these simple rounds, remember that you do not have to do anything grand to be of value. You are already loved, and you are being made beautiful, one day at a time.
The Recipe
Crispy Parmesan Zucchini Rounds

Ingredients
3 medium zucchini, sliced into 1/4-inch rounds
3/4 cup Parmesan cheese, finely grated
2 tbsp extra virgin olive oil
1/2 tsp garlic powder
1/2 tsp Italian seasoning
salt and pepper, to taste
torn fresh basil, for garnish
sugar-free marinara sauce, for dipping
Instructions
1. Preheat. Preheat your oven to 425°F and line a large baking sheet with parchment paper. High heat is the secret here. It is what gives you that crispy, golden edge without turning the zucchini to mush.
2. Toss. In a large bowl, toss the zucchini rounds with olive oil, garlic powder, Italian seasoning, salt, and pepper. Make sure every round gets a light, even coat. This is the foundation.
3. Arrange. Lay the rounds in a single layer on the baking sheet. Do not let them overlap or crowd each other. They need room to breathe to get crispy. Just like us, sometimes.
4. Top. Sprinkle a generous pinch of grated Parmesan on top of each round. Do not be shy. The cheese is what makes these rounds so good. It should look like a light snowfall of cheese across the tray.
5. Roast. Roast for 18 to 20 minutes until the Parmesan is deeply golden and crispy, and the edges of the zucchini are caramelized. Keep an eye on them in the last few minutes. The line between golden and burnt is thin.
6. Serve. Transfer to a serving plate, scatter torn basil over the top, and set out a small bowl of warm marinara for dipping. Watch them vanish.
