Leaning on our own understanding makes us hurried cooks and restless people. We poke at the chicken before the skin has had time to release from the pan. We worry about tomorrow while burning what is right in front of us today. But when we yield the outcome to God, a quiet peace settles over our countertops. Cooking bone-in chicken thighs until the skin is shatteringly crisp and then bathing them in dark maple syrup and aged vinegar takes patience. It asks you to let heat and time do what worry never could. You surrender the rush, and what emerges from that hot skillet is sweet, rich, and more than enough.

- 4 large bone-in, skin-on chicken thighs
- 1 tbsp avocado oil
- 1 tsp coarse sea salt
- 1/2 tsp freshly ground black pepper
- 2 fresh rosemary sprigs
For the Maple Balsamic Glaze
- 3 tbsp pure maple syrup (grade B or dark amber preferred)
- 3 tbsp balsamic vinegar
- 1 tbsp coconut aminos
- 3 garlic cloves, finely minced
- 1 tsp Dijon mustard
Instructions
- Whisk the Glaze: Preheat your oven to 425°F. In a small ceramic bowl, whisk together the pure maple syrup, balsamic vinegar, coconut aminos, minced garlic, and Dijon mustard until glossy and well blended.
- Season the Chicken: Pat the chicken thighs completely dry with a clean paper towel. Season generously with the sea salt and black pepper on both sides. Dry skin is the secret to getting a true, crackling sear.
